Did you eat your veggies today?

If you are anything like me you tell your kids all day- eat your veggie, no more candy, no you cant have soda, eat your veggies.... etc....
So why is it that as moms we get so busy telling our kids what to do and taking care of them, that we dont take good care of ourselves? lol. I really dont think I have eaten a veggie other than at a restaurant for quite a while! That is until this week! I planted myself a box full of different lettaces and spinach about a month ago. I cut it ALL on Tuesday for a dinner with DH and his brother, and I silently morned that I wouldnt have lettace to eat for a while more while it grew back out. Well boy oh boy was I wrong! I went out tonight and there is just as much there now as there was on Tuesday! YIPEE!!! More yummy fresh salads for me! I plan on not letting this planter box going without this stuff from now on! Fresh greens all year long! :)

SO what is your favorate veggie and how often are you eating yours?

(p.s. My fav cooked one is Broccoli!)


  1. I like pretty much all veggies. My favorites are zucchini and broccoli and tomatoes!! Yum! I love tomatoes. We eat veggies (myself included) several times a day. Rachel loves veggies too, so I'm pretty lucky that she's not too picky. :)

  2. Yum, that sounds so good! I'm a veggie lover, we eat tons. Favorite is probably cherry tomatoes, but cucumbers, carrots, lettuce, spinach, beets, peas, corn, zucchini, eggplant, sweet peppers, potatoes, and luckily I'm growing most of it in my garden (although I'm at least a few weeks away from harvesting anything). I love it all!

    Except radishes. Never acquired that taste!

  3. I find I'll do stuff like pick the broccoli off my own plate (even though it's my very favorite) and feed it to my 1 & 3 year old, just to make sure they're getting enough veggies . . . and every once in a while it hits me, "I need to be doing this for ME too!!" It's a Mom thing, I think. :-)

  4. WOW yeah, get stuck on my diet and I feel somedays that is all I eat is veggies, but it will be a good habit to get stuck in since I have 4ish months left to do it. I have been eating tomatoes like crazy, I crave squash and I have recently learned I like brussel sprouts... But we are always eating salads and raw veggies like carrots, cauliflower..(SP) and other dippable stuff, I love peas!!!!!!! in the whole pod!

  5. My family has a new found fondness for artichokes. Part of it is how fun it is to eat them whole. I will admit it takes almost an hour to prepare them,but when they are done watch out, even my 3 year old goes crazy for "chokes" as he calls them. It is addicting just peeling the leaves off and dipping them and then scraping the soft flesh off with your teeth. It can be messy, but that is part of what make teh kids want to eat them. If you would like to know how to prepare them let me know.
