A lot of you have asked me where I find all my swaps- and although I have decided to limit myself and my addiction, lol- I LOVE the swaps that happen at Wee Pereas! http://weepereas.blogspot.com/2009/03/easter-bunny-childrens-swap.html This is an Easter swap, but the best part is, you have to swap 3 things plus an Easter craft or book, and at least one of those things has to be for the mom! I had a lot of fun with my valentine swap and am planning to go sign up for this one right now!

ReplyDeleteI have recipes for you Josie. Let me get them out and I will send them. I can post them if you want so you can share. Here is a chicken and rice one I like:
ReplyDelete3/4 Cup white Rice (I like Jasmine)
1 cup Water
1 Cup Milk
1 can cream of mushroom soup
1 can cream of chicken soup
Chicken
2 tbs. Butter
Salt
Pepper
So mix all the first ingredients together in a 9x13 pan. Take your chicken and pre-cook it, whether by boiling or baking, or using left over chicken. I didn't put an amout because it depens on how chickeny (that's a word I think) you want it. Make sure you use a liberal amount of salt and pepper, remember rice and chicken have little to no flavor. Now cook that all in the over at 375 for 1 hour and then if it needs more time lower to 325 for another 30 minutes. I would cover it with tinfoil so it doesn't dry out to much.
You can deffinately make this more healthy by adding peas adn carrots and other vegetables. Also this was a recipe for Tuna Rice casserole, but my kids got tired of tuna. So feel free to substitute the tuna fish if you want.

ReplyDeleteI made this Casserole when I was pregnant and craving Pizza and didn't have any yeast.
ReplyDelete1 box of small shell noodles
1 lb. of beef
sliced olives
1 can of tibit pineapple
1 cup Shredded cheese
spaghetti sauce
and anything else you would use for pizza toppings.
Brown Beef, salt and pepper
Cook the noodles for about 1-2 min less than the box says.
Mix all the ingredients together. This usually makes about 2 9x13 pans for us. Yummy leftovers! Sprinkle cheese on top and cover with foil. Cook in oven on 350 for about 15-20 min. For the last 5 min take the foil off and let the cheese melt. Take out an enjoy. If it gets a little dry you can pour some more warmed up spaghetti sauce on top.

ReplyDeleteBroccoli Cheese Casserole
20 oz. frozen chopped broccoli heads
1 can cream of mushroom soup
4 oz. grated sharp cheese
2 eggs
3/4 cup mayonnaise
1 med. onion chopped (we like it sauteed)
5 bacon slices crumbled
1/2 c. Ritz cracker crumbs
Cook and drain the broccoli. Mix the soup, cheese, eggs, mayo, onion and bacon together. Fold in the broccoli, spread into a greased 9x13 casserole dish. Sprinkle with the crumbs and dot with butter. Bake uncovered for 30 min. at 350 degrees.
Seven-Layer Gratin
This is on pg 170 of the March 2009 Family Circle magazine, or you can probably find it online. This one is delish. We make it without the artichoke hearts, but that's just us.
You'd probably also like Chicken Divan. It's a broccoli-chicken-curry casserole and a Relief Society staple. I'm not sure where my recipe is, but try searching a recipe website if you like.
